Whatever You Got Lomein


One of the easiest things I make, is lomein. There is never any rhyme or reason, it's mostly just whatever I have handy. Not only is it a cinch to make, but the recipe makes a lot and it keeps for days!

Keep in mind, you can use whatever pasta, veggies, meats, whatever...dump it in, I am sure it will still turn out wonderfully! Personally, I never make the same lomein twice:)

1 box vermicelli pasta
3 cooked and chopped chicken breasts
1 small head of cabbage, shredded
1 qt of sliced mushrooms
1 Large Yellow Onion, Sliced
1 bag of bean sprouts
2 zucchinis, chopped
4 eggs
2 tbsp veggie oil

Sauce:
1/2 cup soy sauce
1/2 cup water
1 tbsp garlic, minced
1 tbsp ginger, minced
1/3 cup brown sugar
1 tbsp veggie oil

PREP:
Chop veggies
Cook chicken
Cook and drain pasta

1. First, make the sauce. Heat veggie oil in a saucepan over medium heat, add garlic and ginger, saute, be careful not to burn. Add soy sauce, water and brown sugar. Whisk continuously over HIGH heat for about 2 minutes. Then remove from heat, set aside, sauce will thicken some over time.

2. In a large wok or pan, heat veggie oil over medium high heat. Add all the veggies and saute until tender. Add the chicken, and mix together.

3. Slowly add pasta, mixing it all together.

4. Add sauce, and stir to coat. Toss over high heat for a few minutes.
