Fajitas

Last night, I made the yummiest fijitas ever. They were reminiscent of the departed faux-mexi chain, ChiChis. I happened to love ChiChis. E coli ridden lettuce aside, I don't know why they had to close. They had the best salty chips ever, and their frozen mango margarittas were heaven sent.

I miss them.

Anyways, I think I have mastered their fajitas, a mix of sweet and yet tangy perfection. I originally got inspiration from a recipe off of allrecipes that called for white wine vinegar, oil, Italian seasoning packets (packets, AGAIN!), but I refuse to live in a Sandra Lee packet world anymore, and decided they were just trying to find a fancy way of saying, pre-made Italian salad dressing. That's right allrecipes.com, I am onto you. Don't come at me with your fancy white wine vinegar, when what you really mean is Kraft Italian dressing.

Chicken Fajitas
3-4 boneless chicken breasts
2-3 green bell peppers
1 large sweet onion

Marinade:
Kraft Italian dressing
5 limes

1. Slice the chicken into ling strips, and in a plastic bag, combine the chicken strips with the juice of 2 limes, and enough Italian dressing to coat. Seal tightly.

2. In another plastic bag, combine sliced onion and green peppers with the juice of 2 limes and enough Italian dressing to coat. Seal tightly.

***Since all the food will be cooked, you can combine the chicken and veggies into one bag to marinate, but I always feel weird putting raw chicken with other things I intend to digest

3. Refrigerate bags of marinade for at least 3 hours, but overnight is better.

4. When ready to prepare, heat an iron grill pan, cast iron skillet, or large heavy skillet to screaming hot!

5. Drain the marinade, and cook the chicken, turning often as not to burn, set aside.

6. Drain the marinade and cook the veggies, turning often, place on chicken when done.

***I cook both long enough to get a good fajita char on them:)

7. Squirt the cooked veggies and chicken with juice from remaining lime.

7. Serve on warm tortillas, sour cream, cheese, gauc, fresh tomatoes, lettuce, and salsa.
