Unbelievable Chicken
I rarely leave a recipe in it's original form. I change and mess with it until it's virtually unrecognizable. Out of sheer laziness, I did not mess with this recipe from allrecipes.com. I threw the marinade on some frozen chicken breasts, tossed them in the fridge and forgot about them for 3 days.
That is my typical summer behavior. Gather a list of marinades, toss them on frozen chicken or steak, let them thaw and soak up the juices for a few days, then pull them out over the course of a week and toss them on the grill. In hindsight, I should have been concerned about the acid from the lemon and lime cooking the chicken, but luckily, that did not happen.
By the time I got back to them...sheer heaven.
Unbelievable Chicken...totally not my name choice
1/4 cup apple cider vinegar
3 tbsp ground mustard
3 cloves minced garlic
1 lime, juiced
1/2 lemon, juiced
1/2 cup brown sugar (I used white)
1 1/2 tsp sea/kosher salt
black pepper to taste
6 tbsp olive oil
6 boneless chicken breasts (I used frozen since it would be marinating for several days)
1. Mix all the elements of the marinade together, and pour over chicken breasts in a sealable bag.
2. Toss into fridge for AT LEAST 8 hours.
3. Grill over high heat until center is no longer pink, about 5-6 minutes on each side.

Wow, this sounds de-lish! I am all about marinades in the summer, and I can't wait to try this one out. Too bad I don't have 8 hours before dinner tonight....guess I'll try it for tomorrow!
I subscribe to allrecipes.com 'recipe a day' emailing list. I totally got this a few weeks ago. I always hope it will give me inspiration for dinner on those super tired nights. A lot of times it does. This one sounds yummy, I'll have to try it.

MM. Will have to try it, but may have trouble remembering it has to marinate for 8 hours... that can be a prob for me.
