Buffalo Chicken Soup



I have been tossing around the idea of a buffalo chicken soup for a while now. Lord knows, I love my buffalo wings, but the little bones made for a big choking hazard for little hands, so I needed to get my fix, and pretend I was eating something healthier than wings. While I am forcefully against serving any type of soup as a meal, this seemed to be the best way to go.

Plus, I have already gained about 10lbs. today just drooling over this pub spread, my pants thank you Heather.

Here is my probably not very healthy version of the soup. You could easily diet this thing up quite a bit by using Healthy Request soups, low fat milk, and Lite sour cream...but I just don't do diet 'round these parts. Go big or go home...and by big, I obviously mean my pants size.

Also, it's an easy soup to sneak veggies into, corn, potatoes, celery, onion...whatever you have on hand, plop it in.

Buffalo Chicken Soup


3 cans Cream of Chicken soup
4 cups of milk
2ish cups shredded chicken (I shredded an entire store bought rotisserie chicken for ease and extra flavor)
1 cup sour cream
1/2 cup buffalo hot sauce( I used 1 full cup of Franks Buffalo sauce, and it was spicy, so start with 1/2 cup and add to taste)
1 bag frozen corn

1. Toss all the ingredients into a big pot over medium heat, and simmer for an hour or until ready to serve.


2. Ladle into bowl, top with cheddar or blue cheese, sour cream, and serve with a side of corn tortilla chips and celery.


***This could easily be a crock pot soup, but I would heat over low heat throughout the day, as so the sour cream doesn't curdle.

VERDICT: Good...but it ain't no chicken wing.

OMG!! A whole cup of hot sauce? You are not serious? Are you trying to blow that little girl right out of you va-jay-j (not sure if I did that right, I'm old). Let me tell you something as an old person...you may end up regretting eating all this spicy stuff. It could even effect your sweet little baby girl. I know you are a Wonderful Mom...but, think of what you are doing. I know you're NOT smoking crack...Thank God!! You are a good Mother, but please lay off the hot sauce until after the little baby girl is born.

I LOVE buffalo chicken anything, so I know I would like this soup.

Franks is the best. I dip pizza into Franks. Mmm, so much sodium but totally worth it.

Ooooooh, I like the idea of getting a chicken from the deli to save time but I am a chicken when it comes to spicy stuff. I might only be able to handle 1/4 cup sauce!
